Rocket & CROC EGGS™ Plum Summer Salad

INGREDIENTS

  • 250 g CROC EGGS™ Plums
  • 120 g rocket leaves
  • 1/2 red onion, thinly sliced
  • 50 g goats cheese
  • 30 g walnuts, roughly chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp verjuice

METHOD

  1. Divide plums into 8 wedges & discard seeds.
  2. Heat a grill pan to hot & reduce heat to medium. Grill plum wedges for 1 minute on each side. Remove from heat.
  3. In a large bowl, add rocket leaves, onion, plums & walnuts. In a seperate bowl combine olive oil & verjuice.
  4. Just before serving, gently toss through the olive oil & verjuice to coat all ingredients. Serve on a large platter with the walnuts & goats cheese sprinkled over the top.
