envy™ Apple & Chia Overnight Oats

INGREDIENTS

  • 1 cup rolled oats
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon chia seeds
  • 1 cup almond milk
  • ½ cup coconut yoghurt
  • 1 envy™ apple, cored and grated
  • 2 tablespoons toasted chopped nuts or chia seeds
  • Fresh seasonal fruits

METHOD

  • Combine the oats, honey or maple syrup, chia seeds and almond milk and mix well.
  • Then fold through the grated apple and yoghurt.
  • Divide the mixture between two jars or serving bowls and chill overnight.
  • Top with the toasted nuts and fresh fruits just before serving.
