Butter Lettuce & envy™ Apple Salad with Shallot Vinaigrette

INGREDIENTS

  • For the salad
  • 1 head of butter leaf lettuce, loosely chopped
  • 2 envy™ apples, small diced
  • 1/2 English cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • For the vinaigrette
  • 2 tbsp red wine vinegar
  • 3 tbsp extra virgin olive oil
  • 1 tbsp finely chopped shallot
  • 1 tsp Dijon mustard
  • 1/8 tsp kosher salt
  • 20 turns of fresh cracked pepper

METHOD

  • Whisk together vinaigrette ingredients until well combined
  • Lightly toss all salad ingredients and desired amount of vinaigrette
