Mini Chocolate JAZZ™ Apple Muffins

INGREDIENTS

  • Dry
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 1/2 cup unsweetened cocoa powder, sifted
  • 1 tsp baking soda
  • Wet
  • 1 cup plain yogurt
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup whole milk
  • ½ cup vegetable oil
  • Stir in
  • 3/4 cup chocolate chips
  • 1 cup diced JAZZ™ apple

METHOD

  • Preheat oven to 200 degrees Celsius
  • Whisk together all dry ingredients
  • Whisk together all wet ingredients
  • Fold in wet ingredients into dry ingredients until well incorporated
  • Stir in chocolate chips and diced apples
  • Spray mini muffin tin with non-stick spray (if not a non-stick pan) or line with liners
  • Fill muffin tin ¾ of the way and bake for 8-10 minutes or until a toothpick comes out smooth (if doing regular sized muffins, bake 16-20 minutes)
  • Remove from oven and let cool slightly before removing from the pan
