envy™ Apple & Date Muffins

INGREDIENTS

  • 1 cup plain flour
  • 1 cup bran flakes
  • ¾ cups brown sugar
  • ½ cup chopped dates
  • ½ teaspoon mixed spice
  • 2 teaspoons baking powder
  • 115gms butter, melted
  • 1 egg, beaten
  • ¾ cup milk
  • 2 envy™ apples
  • 1 tablespoon maple syrup

METHOD

  • Preheat the oven to 190 degrees and line a muffin pan with cupcake papers.
  • Peel and core the envy™ apples and dice finely, toss with the maple syrup.
  • In a large bowl combine the flour, bran flakes, brown sugar, dates, spice and baking powder, mix well.
  • In a separate bowl whisk the melted butter, egg and milk together.
  • Add half the maple apples to the dry ingredients.
  • Pour the wet ingredients into the dry and fold together until just mixed.
  • Spoon evenly into the muffin tin.
  • Using the remaining apple add a small teaspoonful to the top of each muffin.
  • Bake for 20-25 minutes until the muffin mix is just set and apple topping golden.
  • Allow to cool for 5 minutes before removing from the tin.
  • Serve with butter or dust with icing sugar.
