INGREDIENTS
4 slices sour dough bread
1 tablespoon butter
1 envy™ apple, peeled and corned and thinly sliced
50g brie cheese
4 slices cooked rindless bacon
1 teaspoon honey mustard relish
METHOD
Butter the bread slices
Peel and core the apple and cut into thin slices
Lay out two slices of bread, buttered slide down
Top with a little honey mustard then layer with 2 slices of bacon envy™apple slices and brie cheese slices
Top with the remaining two slices of bread butter side up to create two sandwiches
Heat a grill pan or frying pan and cook the sandwiches until golden brown on each side and the cheese is beginning to bubble
Cut the sandwiches in half and serve with a side salad or extra relish
