½ cup roughly chopped herbs – mint, coriander & parsley

METHOD
Prepare the vegetables and set aside.
Core and slice the envy™ apple into fine strips
Combine the pulled pork with the hoisin sauce and mix well
Dip 1 rice paper sheet into a bowl or warm water for a 10-15 seconds until soft and pliable
Lay the rice paper flat on a sheet of baking paper, arrange a few noodles in the centre, top with a little pulled pork and then a few of each vegetable, envy™ apple strips and fresh herbs creating a log in the center of the rice paper
Fold the ends of the rice paper in and roll up enclosing the filling
Set the finished roll aside on a plate and cover with a damp paper towel or clean cloth
Continue with the next rice paper sheet
Arrange the rice paper rolls on a serving plate with extra hoisin for dipping and garnish with fresh herbs
