2 the MONTAGUE tree™ ripe peaches, pitted and cut into wedges
2 cups watermelon, rind removed and cut into wedges
1/2 cup red cherry tomatoes, halved
1/2 cup yellow cherry tomatoes, halved
1/2 cup feta cheese, cut into cubes
2 tbsp pistachios
1/4 cup mint leaves
1/4 cup basil leaves
2 tbsp balsamic vinegar
1 tbsp extra virgin olive oil
1 tbsp honey
salt & pepper to season
METHOD
Arrange the tomatoes, watermelon, the MONTAGUE tree™ peaches & feta on a platter. Scatter the mint and basil leaves amongst the fruit. Sprinkle the pistachios on top.
Whisk the balsamic vinegar, olive oil, honey together in a small bowl, season with salt and pepper to taste.
